REDA cheese forming equipment automatically forms cheese blocks of a set size. The unit is designed for pressing hard and semi-hard cheeses.
Steiner Ukraine is the REDA distributor in Ukraine. The common principles of REDA equipment, including UHT configurations and separator design, are described on the page REDA.
How does cheese forming work on the REDA unit?
Curd is fed into moulds and pressed. At the same time, a draining belt collects the whey released during forming.
The pressed cheese advances and is cut. The cut length is set by the program based on time and mould length.
How is cheese forming controlled?
The operator controls the process from a touch panel. Two main parameters are set on it:
- pressing time;
- pressing force.
Block cutting is also programmed there: by time and mould length. The cut length determines the size of the finished cheese block.

What does automatic cheese forming give?
- Precise and repeatable forming of cheese blocks of the same size in every batch.
- Whey drainage during forming, without a separate operation.
- Block cutting by program, without manual measuring.
- Control of pressing and cutting from a single operator panel.
Which equipment works with cheese forming?
Curd for forming is prepared in REDA cheese vats. After forming, the blocks are sent for brining.
For brine cleaning, REDA offers Pure Brine brine filtration. Whey from the draining belt can be processed on the whey processing line.
