As part of the regular meeting of Steriflow agents, which was also attended by representatives of Steiner-Ukraine, a visit to Dailyfresh, one of the largest producers of ready-to-eat meals in the Netherlands, was organised.
"Dailyfresh specialises in the production of pasteurised ready-to-eat meals using sous vide technology and produces up to 1,000 different recipes every week. All ready-to-eat products have a shelf life of no more than a month at a temperature of +4 to +6 Celsius. The main consumers of the ready-to-eat meals are schools, hospitals, kindergartens, and HoReCa clients.
Dailyfresh production facilities are built in accordance with the most modern requirements and standards. The operating temperature in all workshops is +4, +6 (i.e. the storage temperature of the product), which ensures minimal risk of spoilage of raw materials and improves the quality of the finished product.
The production cycle includes preparation of ingredients, vacuum packaging and cooking/pasteurisation of the finished product in an autoclave.
The cooking cycle in the autoclave is from 2 to 6 hours, depending on the recipe. Cooking takes place at a reduced temperature. For this type of product, the most important factors are the accuracy of temperature retention and uniformity of temperature distribution. That is why this critical process is carried out in Steriflow horizontal autoclaves. Today, three Steriflow 4-basket autoclaves are successfully operating at Dailyfresh's facilities.
