With a flow rate of 400 l / h and an operating pressure of 120 bar, our MICROLAB 400 is ideal for small batch sizes. It can be used in both ways: with one pasteurizer (recirculation mode) or with two pasteurizers (in-line installation between two pasteurizers).

The aim of the homogenization process is to positively influence the taste and aroma of the ice cream, and it also makes the ice cream creamier and less cold. How does the MICROLAB 400 work?

Pumping pistons push the product through the homogenizing valve at a pressure of 120 bar. In the homogenizing valve, due to the rapid increase in speed (up to 9,300 cm / s), strong cavitation and due to friction between the cells, the product undergoes a micronization process, which reduces the average particle diameter of the solid fat particle to a few micrometers in diameter (<0.0035 mm). The micronization process removes the outer coating of fat cells, increases the contact area with emulsifiers, promotes the water-oil phase, softens the texture of the ice cream and imparts a dry taste, which makes the ice cream a high-quality product.
